Foodie Friday - Crispy Cheddar Chicken

I found this recipe through my pinterst addiction.  This is the first recipe I have made from Jamie Cooks It Up!, and I will be checking out the other recipes on this blog.  I made Crispy Cheddar Chicken a little over a week ago.  I will be adding this recipe to my Tried and True box, with a few alterations.  Let's talk about what I did, my results and what I'll be changing the next time I make this recipe.

I followed Jamie's recipe, working with what I had on hand.  I didn't use the Ritz crackers, as I already has some crackers ground into crumbs.   I used chicken tenders in place of the breast.  I also made a smaller version of the recipe, as there are only two in our house.  I also used my baking stone rather than a baking dish.  

Hubby and I love the recipe, and I'll be making it again.  The gravy was delicious, and if you read yesterday's post you'll have insight into the soup I chose to use to make this gravy.   I served Crispy Cheddar Chicken with grits and steamed asparagus.

Over All Recipe Review:
  • After making this dish with something other than Ritz crackers, I strongly recommend using the Ritz crackers.  I usually use Ritz crackers for my breding, but had some other cracker crumbs and thought I would use them.  The chicken was very tasty, but I think the Ritz crackers impart a butter flavor that can't be created with other cracker crumbs.
  • The next time I make this dish I will be using an egg wash in place of the milk.  I didn't feel the milk was the proper glue needed to keep the chicken and cracker crumbs in tact.  Most likely I will do a traditional breading of flour, egg wash, then the cheese and the cracker crumbs.
  • I feel the chicken should also be seasoned a bit, with a basic salt and  pepper.
  • Loved the simple gravy, can't wait to try making a similar gravy with cream of mushroom soup.
I will be trying other recipes from Jamie Cooks It Up!, as this recipe was so simple and flavorful and lends itself to being reduced or doubles as needed.
